Flor de Caña Extra Seco is produced by the Pellas family at the Compañía Licorera de Nicaragua in Chichigalpa, at the base of the San Cristóbal volcano in northwestern Nicaragua — a site the family has operated continuously since 1890. The distillery draws from locally grown sugarcane cultivated in the volcanic soils surrounding the production facility, a terroir of considerable fertility shaped by centuries of geological activity. Flor de Caña is Carbon Neutral and Fair Trade certified, distilled entirely with renewable energy, and produced without added sugar, artificial ingredients, or accelerants of any kind — a commitment the brand describes through the term "Slow-Aged," reflecting genuine barrel maturation for the period stated on the label rather than blended or additive-assisted aging.

The molasses-based distillate is distilled five times in multicolumn stills before entering used American bourbon barrels for four years of tropical aging. Nicaragua's warm, equatorial climate accelerates the interaction between spirit and wood, driving a more active maturation cycle than the same period would produce in a cooler environment. Following aging, the rum is filtered to crystal clarity, removing the color accumulated during barrel contact while preserving the aromatic and flavor compounds developed over the four years in wood. The result is classified as Extra Seco — extra dry — a designation that reflects both the absence of added sugar and the spirit's clean, precise palate profile.

The nose is light and aromatic, with sweet almond, vanilla, and a faint tropical citrus note. On the palate, the spirit is lean and precise — vanilla, coconut, and a suggestion of bourbon barrel spice develop through a smooth, dryish mid-palate that remains light-bodied and clean throughout. The finish is moderately long, closing on dry sugarcane and toasted vanilla, with a faint peppery note that lingers cleanly. The overall profile is built for cocktail use, with enough character to contribute to the glass without competing with other ingredients.

Miles V. ★★★★★

Picked this up for mojitos and it's become my go-to clear rum — the extra seco style is genuinely dry, not sweet like so many silver rums I've tried. Four years in oak gives it just enough body to sip neat too.

William ★★★★★

The volcanic soil around San Cristóbal must do something special—this four-year extra seco is remarkably smooth for a clear rum. It’s become my go-to for mixing, and the bottle’s clean profile makes every sip feel a little more refined than the price suggests.

Steven F. ★★★★★

Picked this up for mojitos and it holds its own against pricier aged stuff. Being a 4 year clear rum, it's got just enough bite to cut through lime and mint without tasting harsh. The 750ml bottle is already half gone.
